Description

A hearty and satisfying Tater Tot Breakfast Casserole featuring crispy tater tots, savory breakfast sausage, onions, and melted cheddar cheese all baked with a flavorful egg custard. Perfect for an easy make-ahead breakfast or brunch that serves 8.

Ingredients

Scale

Main Ingredients

  • 1 (32 oz) bag frozen tater tots
  • 1 pound breakfast sausage (pork or turkey)
  • 1 small onion, finely chopped
  • 1 1/2 cups shredded cheddar cheese
  • 8 large eggs
  • 1 cup whole milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Optional Garnish

  • Chopped green onions or parsley

Instructions

  1. Preheat and Prepare the Baking Dish: Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish to prevent sticking.
  2. Cook Sausage and Onion: In a skillet over medium heat, cook the breakfast sausage along with the finely chopped onion. Break up the sausage as it cooks until it is browned and fully cooked. Drain any excess fat and set the mixture aside.
  3. Arrange Tater Tots and Sausage: Place the frozen tater tots in a single layer at the bottom of the prepared baking dish. Evenly sprinkle the cooked sausage and onion mixture over the tater tots, followed by a generous layer of shredded cheddar cheese.
  4. Prepare Egg Mixture: In a medium bowl, whisk together the eggs, whole milk, garlic powder, salt, and black pepper until fully combined and smooth.
  5. Pour Egg Mixture Over Casserole: Carefully pour the egg mixture evenly over the layered tater tots, sausage, and cheese in the baking dish.
  6. Bake the Casserole: Bake uncovered in the preheated oven for 45 to 50 minutes. The casserole is done when the eggs are set and the top is golden brown.
  7. Cool and Garnish: Remove from the oven and let the casserole cool for 5 to 10 minutes. Garnish with chopped green onions or parsley before slicing and serving.

Notes

  • This casserole can be assembled the night before and baked fresh in the morning for convenience.
  • Add diced bell peppers or spinach to increase the vegetable content and add flavor.
  • Swap cheddar cheese with pepper jack for a spicy twist to the flavor profile.
