Instructions

  1. Prepare the Shrimp: Pat the shrimp dry with paper towels to remove excess moisture. In a bowl, toss the shrimp with minced garlic, smoked paprika, cayenne pepper, chili powder, salt, and black pepper until evenly coated.
  2. Cook the Shrimp: Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the seasoned shrimp in a single layer and cook for 2 to 3 minutes on each side, or until they are pink, cooked through, and opaque. Remove the shrimp from the skillet and keep warm.
  3. Cook the Cauliflower Rice: In the same skillet, add the remaining 1 tablespoon olive oil. Add the riced cauliflower and diced red bell pepper. Cook, stirring occasionally, for 5 to 6 minutes until the cauliflower is tender and slightly browned.
  4. Season the Rice: Stir in the soy sauce or tamari, lime juice, and sliced green onions to the cauliflower rice mixture. Mix until well combined and heated through.
