Description

A delicious and satisfying Shrimp & Cheese Grilled Sandwich featuring sautéed garlic shrimp seasoned with Italian herbs, layered with melted mozzarella cheese, and grilled to golden perfection on buttery sourdough bread. Perfect for a quick lunch or light dinner.

Ingredients

Scale

Shrimp Mixture

  • 8 oz shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • A pinch of red pepper flakes (optional)

Sandwich

  • 4 slices of sourdough or thick-cut bread
  • 1 cup shredded mozzarella cheese (or any melting cheese)
  • 1 tablespoon butter (for toasting)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Sauté the shrimp: In a skillet, heat olive oil over medium heat. Add the minced garlic and cook until fragrant, about 30 seconds. Add the shrimp, season with salt, pepper, and Italian seasoning, then sauté until shrimp turn pink and are cooked through, about 3-4 minutes. Remove from heat and set aside.
  2. Assemble the sandwich: Spread a thin layer of butter on one side of each bread slice. On the unbuttered side of one slice, add half of the shredded cheese, then layer the cooked shrimp on top, followed by the remaining cheese. Place the second slice of bread on top, with the buttered side facing outward.
  3. Grill the sandwich: Heat a skillet or griddle over medium heat. Place the sandwich onto the skillet and cook until the bread is golden and crispy and the cheese begins to melt, about 3-4 minutes. Carefully flip the sandwich and grill the other side until golden brown and cheese is fully melted.
  4. Garnish and serve: Remove the sandwich from the skillet, garnish with fresh parsley and optionally with a pinch of red pepper flakes for some heat. Serve hot and enjoy your flavorful shrimp and cheese grilled sandwich.

Notes

  • Use any melting cheese you prefer, such as cheddar or provolone, for different flavors.
  • You can add a squeeze of lemon juice to the shrimp while cooking for a fresh tangy flavor.
  • Make sure to butter the outside of the bread slices to get a crispy, golden crust.
  • To avoid overcooking the shrimp, cook them just until they turn pink and opaque.
  • For extra flavor, add sliced tomatoes or lettuce inside the sandwich before grilling.
