Description

Delicious and hearty Sausage Egg and Cheese Breakfast Roll-Ups that come together in just 30 minutes. Perfect for a quick and satisfying breakfast, these roll-ups feature savory breakfast sausage, fluffy scrambled eggs, and melted cheddar cheese all wrapped in warm flour tortillas. Optionally toasted for a crispy finish, they are ideal for busy mornings or meal prep.

Ingredients

Scale

Sausage

  • 1 package breakfast sausage (about 12-16 oz)

Egg Mixture

  • 6 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter

Additional

  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas

Instructions

  1. Cook the sausage: Heat a skillet over medium heat and cook the breakfast sausage, breaking it apart as it browns evenly. Continue cooking for 5-7 minutes until fully browned and cooked through. Drain any excess grease and set the sausage aside.
  2. Prepare the egg mixture: In the same skillet, lower the heat to medium-low and melt the butter. In a bowl, whisk together the eggs, milk, salt, and black pepper until well combined. Pour the egg mixture into the skillet.
  3. Cook the eggs: Allow the eggs to cook undisturbed until the edges begin to set. Gently scramble the eggs, stirring occasionally to achieve a soft and creamy texture. Avoid overcooking for tender eggs.
  4. Combine sausage and cheese: Remove the skillet from heat. Stir the cooked sausage into the scrambled eggs, then fold in the shredded cheddar cheese until it melts through the warm mixture.
  5. Assemble the roll-ups: Spoon an even portion of the egg, sausage, and cheese mixture onto the center of each flour tortilla. Fold the sides of the tortillas inward and then roll them tightly from one end to the other, creating a compact roll-up.
  6. Toast the roll-ups (optional): To add a crispy exterior, place each roll-up seam-side down in a clean skillet over medium heat. Cook for 2-3 minutes on each side until golden brown and slightly crispy. Serve warm and enjoy!

Notes

  • Use medium-low heat when cooking eggs to avoid overcooking and maintain a creamy texture.
  • Choose flour tortillas large enough to hold the filling without breaking.
  • Leftover roll-ups can be wrapped in foil and refrigerated for up to 3 days; reheat in a skillet or microwave before serving.
  • You can substitute cheddar cheese with your favorite cheese like Monterey Jack or mozzarella.
  • Optionally add diced vegetables like bell peppers or onions to the egg mixture for added flavor and nutrition.
