Pinwheel Filling
- 8 ounces cream cheese, softened
- 1/2 cup sour cream
- 1 ounce packet ranch seasoning mix
- 1 cup shredded cheddar cheese

- 1/2 cup finely diced red bell pepper (optional)
- Salt and pepper to taste

- Prepare the Filling: In a medium bowl, combine the softened cream cheese, sour cream, and ranch seasoning mix. Stir until the mixture is smooth and well blended. - Spread the Mixture: Lay out the 4 large flour tortillas flat on a clean surface. Spread an even layer of the ranch cheese mixture over each tortilla, making sure to cover the entire surface edge to edge.
- Roll the Tortillas: Starting from one edge, roll each tortilla tightly into a log shape. Wrap each rolled tortilla securely in plastic wrap.
- Chill to Firm Up: Refrigerate the wrapped tortilla logs for at least 1 hour. This chilling helps the filling set and makes slicing easier.
- Slice and Serve: After chilling, remove the plastic wrap and slice each roll into 1-inch pinwheels. Arrange the pinwheels on a serving platter. Serve chilled or at room temperature for best flavor and texture.
