Description

Ranch Pinwheels are a delicious and easy-to-make appetizer featuring creamy ranch-flavored filling spread onto flour tortillas, rolled up, chilled, and sliced into bite-sized pinwheels. Perfect for parties, snacks, or potlucks, these no-bake pinwheels combine cream cheese, sour cream, shredded cheddar, bacon, and fresh veggies for a flavorful, crowd-pleasing treat.

Ingredients

Scale

Pinwheel Filling

  • 8 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1 ounce packet ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup finely chopped cooked bacon
  • 1/2 cup finely chopped green onions
  • 1/2 cup finely diced red bell pepper (optional)
  • Salt and pepper to taste

Assembly

  • 4 large flour tortillas

Instructions

  1. Prepare the Filling: In a medium bowl, combine the softened cream cheese, sour cream, and ranch seasoning mix. Stir until the mixture is smooth and well blended. Then add shredded cheddar cheese, chopped bacon, green onions, and diced red bell pepper if using. Season with salt and pepper as desired and mix thoroughly.
  2. Spread the Mixture: Lay out the 4 large flour tortillas flat on a clean surface. Spread an even layer of the ranch cheese mixture over each tortilla, making sure to cover the entire surface edge to edge.
  3. Roll the Tortillas: Starting from one edge, roll each tortilla tightly into a log shape. Wrap each rolled tortilla securely in plastic wrap.
  4. Chill to Firm Up: Refrigerate the wrapped tortilla logs for at least 1 hour. This chilling helps the filling set and makes slicing easier.
  5. Slice and Serve: After chilling, remove the plastic wrap and slice each roll into 1-inch pinwheels. Arrange the pinwheels on a serving platter. Serve chilled or at room temperature for best flavor and texture.

Notes

  • You can prepare these pinwheels up to a day in advance for convenience.
  • For a lighter version, substitute low-fat cream cheese and sour cream.
  • Customize by adding ingredients like chopped olives, diced ham, or fresh spinach for variety.
