Instructions

  1. Preheat Oven: Preheat your oven to 250°F and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Slice Sweet Potatoes: Peel the sweet potatoes and slice them lengthwise into ¼-inch thick sticks or strips. Try to keep them uniform in size for even cooking.
  3. Prepare Coating: In a small bowl, mix the peanut butter and coconut oil until smooth. If you want, add the ground cinnamon for additional flavor. If the mixture is too thick, warm it slightly in the microwave to make it easier to coat the sweet potatoes.
