Ingredients
Scale
Mushroom Filling
- 2 cups mushrooms, sliced (button or cremini mushrooms work well)
- 1 medium onion, thinly sliced
- 2 tablespoons butter (for sautéing)
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon thyme (optional)
- Salt and pepper, to taste
Sandwich Assembly
- 4 slices sourdough or any hearty bread
- 4 slices of cheese (Swiss, cheddar, or mozzarella)
- 2 tablespoons butter (for grilling)
Instructions
- Sauté the Mushrooms: In a large skillet, heat 2 tablespoons of butter and 1 tablespoon of olive oil over medium heat until melted and shimmering.
- Add Mushrooms and Onions: Add the sliced mushrooms and onions to the skillet and sauté until the mushrooms release their moisture and become golden brown, about 7-10 minutes, stirring occasionally.
- Add Garlic and Thyme: Stir in the minced garlic and thyme, if using, and cook for an additional 1-2 minutes until fragrant, making sure not to burn the garlic.
- Season: Season the sautéed mixture with salt and pepper to taste, then remove from heat and set aside.
- Assemble the Sandwiches: Lay out the slices of bread on a clean surface. Spoon the mushroom and onion mixture evenly onto two slices of bread.
- Add Cheese: Place one slice of cheese on top of the mushroom filling on each bread slice.
- Top with Bread: Cover with the remaining slices of bread to form two sandwiches.
- Heat Skillet: Heat a nonstick skillet or griddle over medium-low heat in preparation for grilling.
- Butter the Sandwiches: Spread 1-2 tablespoons of butter on the outside surfaces of each sandwich to ensure a crispy, golden crust.
- Grill: Place the sandwiches in the skillet and cook for 3-4 minutes on each side, pressing gently and flipping once, or until the bread is golden brown and the cheese inside has melted.
- Serve: Remove the sandwiches from the skillet once cooked, cut each sandwich in half, and serve immediately while warm and melty.
Notes
- Use mushrooms with firm texture like button or cremini for best results.
- Adjust the amount of butter to control crispiness and richness.
- Add fresh herbs such as thyme or rosemary to elevate the flavor.
- If you prefer a spicier kick, add red pepper flakes during sautéing.
- Use your preferred cheese type, Swiss provides a nuttier flavor while cheddar gives a sharper taste.
- For a vegan option, substitute butter with plant-based butter and cheese with a vegan cheese alternative.
