Description

This Mongolian Ground Beef Noodles recipe is a quick and flavorful Asian-inspired main course featuring ground beef simmered in a savory-sweet sauce, served over tender lo mein or spaghetti noodles. Perfect for a weeknight dinner, it combines aromatic garlic, ginger, and a rich soy-based sauce with optional spicy heat and fresh green onions for a satisfying meal.

Ingredients

Scale

Beef and Sauce

  • 1 tablespoon vegetable oil
  • 1 pound ground beef
  • 4 cloves garlic, minced
  • 1/2 teaspoon ground ginger
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 1 tablespoon hoisin sauce
  • 1 tablespoon cornstarch
  • 1 cup beef broth

Noodles and Garnishes

  • 8 ounces lo mein or spaghetti noodles
  • 1/2 cup sliced green onions
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • Sesame seeds for garnish (optional)

Instructions

  1. Cook the noodles: Prepare the noodles according to the package instructions until al dente. Drain well and set aside to keep warm.
  2. Brown the beef: Heat vegetable oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned and no longer pink. Drain excess grease if necessary.
  3. Sauté aromatics: Add the minced garlic and ground ginger to the skillet and cook for about one minute until fragrant.
  4. Prepare the sauce: In a small bowl, whisk together low-sodium soy sauce, brown sugar, hoisin sauce, cornstarch, and beef broth until smooth.
  5. Simmer the sauce with beef: Pour the sauce mixture into the skillet with the cooked beef. Bring to a simmer and cook for 3 to 5 minutes, stirring frequently, until the sauce thickens and coats the beef.
  6. Toss noodles with sauce: Add the cooked noodles to the skillet and toss thoroughly to coat them evenly with the beef and sauce.
  7. Finish and season: Stir in the sliced green onions and red pepper flakes if using. Season with salt and black pepper according to your taste.
  8. Garnish and serve: Optionally sprinkle with sesame seeds for garnish. Serve the Mongolian ground beef noodles hot.

Notes

  • You can substitute ground turkey or chicken for the beef for a lighter protein option.
  • For extra nutrition and color, toss in shredded carrots, sliced bell peppers, or snap peas when adding the garlic and ginger.
  • Adjust the spice level by increasing or omitting red pepper flakes as preferred.
