Description

McGriddle Muffins are a delightful homemade breakfast treat combining fluffy muffin batter with savory sausage patties, melted American cheese, and scrambled eggs, all infused with a touch of maple syrup for a perfect balance of sweet and savory flavors. These grab-and-go muffins are easy to prepare, bake to golden perfection, and make for a satisfying start to your day.

Ingredients

Scale

Batter Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1/2 teaspoon vanilla extract
  • 1/4 cup maple syrup

Filling Ingredients

  • 4 cooked breakfast sausage patties
  • 4 slices American cheese
  • 2 large eggs (for cooking and layering)

Additional

  • Non-stick spray or butter for greasing muffin tin

Instructions

  1. Preheat and grease: Preheat your oven to 350°F (175°C). Lightly grease a muffin tin using non-stick spray or butter to prevent sticking.
  2. Mix dry ingredients: In a medium bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, and salt until well combined.
  3. Mix wet ingredients: In a separate bowl, whisk the buttermilk, 1 large egg, melted butter, vanilla extract, and maple syrup until the mixture is smooth and consistent.
  4. Combine batter: Pour the wet ingredients into the dry ingredients and stir gently until just combined, taking care not to overmix to keep the muffins tender.
  5. Prepare muffin cups: Spoon about 1 tablespoon of the batter into the bottom of each muffin cup, spreading it lightly to form a base layer.
  6. Add fillings: Press a cooked breakfast sausage patty into the center of each muffin cup over the batter. Place a slice of American cheese on top of each sausage patty.
  7. Scramble eggs: Lightly scramble the 2 large eggs in a pan and spoon a small amount over the cheese layer in each muffin cup for extra richness.
  8. Top with batter: Cover the filling in each cup with another tablespoon of batter, completely enclosing the sausage, cheese, and egg layers.
  9. Bake: Place the muffin tin in the preheated oven and bake for 15 to 18 minutes, or until the muffins are golden brown on top and a toothpick inserted in the batter portion comes out clean.
  10. Cool and serve: Remove the muffins from the oven and allow them to cool for a few minutes in the tin. Carefully remove the muffins and serve warm.

Notes

  • Pre-cooked sausage patties and scrambled eggs can be used to save time during preparation.
  • For extra sweetness, add a few drops of maple syrup into the batter before baking.
  • These muffins freeze well and can be reheated in the microwave for a quick and convenient breakfast option.
