Batter Ingredients
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup buttermilk
- 1 large egg
- 2 tablespoons melted butter
- 1/2 teaspoon vanilla extract
- 1/4 cup maple syrup
Filling Ingredients
- 4 cooked breakfast sausage patties
- 4 slices American cheese
- 2 large eggs (for cooking and layering)
Additional
- Non-stick spray or butter for greasing muffin tin
Instructions
- Preheat and grease: Preheat your oven to 350°F (175°C). Lightly grease a muffin tin using non-stick spray or butter to prevent sticking.
- Mix dry ingredients: In a medium bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, and salt until well combined.
- Mix wet ingredients: In a separate bowl, whisk the buttermilk, 1 large egg, melted butter, vanilla extract, and maple syrup until the mixture is smooth and consistent.
- Combine batter: Pour the wet ingredients into the dry ingredients and stir gently until just combined, taking care not to overmix to keep the muffins tender.
- Prepare muffin cups: Spoon about 1 tablespoon of the batter into the bottom of each muffin cup, spreading it lightly to form a base layer.
- Add fillings: Press a cooked breakfast sausage patty into the center of each muffin cup over the batter. Place a slice of American cheese on top of each sausage patty.
- Scramble eggs: Lightly scramble the 2 large eggs in a pan and spoon a small amount over the cheese layer in each muffin cup for extra richness.
- Top with batter: Cover the filling in each cup with another tablespoon of batter, completely enclosing the sausage, cheese, and egg layers.
- Bake: Place the muffin tin in the preheated oven and bake for 15 to 18 minutes, or until the muffins are golden brown on top and a toothpick inserted in the batter portion comes out clean.
- Cool and serve: Remove the muffins from the oven and allow them to cool for a few minutes in the tin. Carefully remove the muffins and serve warm.

- Pre-cooked sausage patties and scrambled eggs can be used to save time during preparation.
- For extra sweetness, add a few drops of maple syrup into the batter before baking.
