Potatoes

  • 4 large russet potatoes, scrubbed clean and dried
  • 2 tablespoons olive oil, divided
  • Salt, to taste
  • 2 tablespoons butter

Steak Bites

  • 1 lb sirloin steak, cut into bite-sized cubes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste

Toppings

  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 4 slices bacon, cooked and crumbled
  • 2 green onions, sliced


Instructions

  1. Prepare and Bake Potatoes: Preheat your oven to 400°F (200°C). Pierce each russet potato multiple times with a fork. Rub the potatoes lightly with 1 tablespoon of olive oil and sprinkle them with salt. Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until a fork easily pierces through and the potatoes are tender inside.
  2. Cook Steak Bites: While the potatoes bake, heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the steak cubes with garlic powder, onion powder, salt, and pepper. Once the skillet is hot, add the steak bites and sear them for 2-3 minutes per side until browned and cooked to your preferred level of doneness. Remove the steak from the heat and set aside.
  3. Assemble Potatoes: When the potatoes are done, take them out of the oven and slice them open lengthwise. Fluff the insides with a fork and add a small pat of butter to each potato to melt through the fluffy interior.
  4. Add Toppings: Layer the shredded cheddar cheese over the hot potato so it begins to melt. Spoon steak bites on top, followed by dollops of sour cream, crumbled bacon, and sliced green onions for freshness and crunch. Serve immediately while hot and enjoy!
