Garlic Butter Sauce

  • 3 tablespoons salted butter
  • 3 garlic cloves, finely minced
  • 3 tablespoons finely chopped flat-leaf parsley


Instructions

  1. Prepare baking sheet: Set a wire rack on top of a baking sheet to keep the cooked steak bites warm and prevent them from sitting in excess oil.
  2. Season steak: Place the sirloin steak cubes in a large bowl. Sprinkle with salt, black pepper, and red pepper flakes if using. Toss well to coat evenly and let the steak rest at room temperature for 30 minutes to enhance flavor and cooking.
  3. Drizzle with oil: Drizzle the avocado oil over the seasoned steak cubes and toss until fully coated, ensuring a good sear during cooking.
  4. Sear steak cubes: Heat a large cast-iron skillet over medium-high heat until very hot. Add half of the steak cubes in a single layer; the oil should sizzle immediately. Cook each side for 2-3 minutes until browned and cooked to desired doneness. Transfer cooked steak to the wire rack on the baking sheet and tent loosely with foil. Repeat with the remaining steak cubes.
  5. Make butter sauce: Reduce the skillet heat to low. Add the salted butter and let it melt completely. Stir in the minced garlic and cook for about 30 seconds until fragrant, being careful not to burn the garlic.
  6. Toss steak in garlic butter: Remove the skillet from the heat and return all the cooked steak bites to the skillet. Toss them thoroughly to coat in the garlic butter sauce.
