  2. Separate Eggs: Carefully separate the egg whites from the yolks, placing them into two different mixing bowls.
  3. Beat Egg Whites: Using a hand mixer or stand mixer, beat the egg whites until stiff peaks form, which means the whites hold firm shapes when the beaters are lifted.
  4. Mix Yolks and Ingredients: In the yolk bowl, combine the egg yolks, cottage cheese (or cream cheese), cream of tartar, and sweetener if using; mix until the mixture is smooth and uniform.
  5. Fold Egg Whites: Gently fold the beaten egg whites into the yolk mixture in batches, taking care not to deflate the air whipped into the whites, to maintain the bread’s fluffy texture.
