Cloud Bread Ingredients
- 3 large eggs
- 3 tablespoons whole milk cottage cheese (or cream cheese)
- 1/4 teaspoon cream of tartar
- 1 packet artificial sweetener (optional)
Instructions
- Preheat Oven: Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper to ensure the bread does not stick while baking.
- Separate Eggs: Carefully separate the egg whites from the yolks, placing them into two different mixing bowls.
- Beat Egg Whites: Using a hand mixer or stand mixer, beat the egg whites until stiff peaks form, which means the whites hold firm shapes when the beaters are lifted.
- Mix Yolks and Ingredients: In the yolk bowl, combine the egg yolks, cottage cheese (or cream cheese), cream of tartar, and sweetener if using; mix until the mixture is smooth and uniform.
- Fold Egg Whites: Gently fold the beaten egg whites into the yolk mixture in batches, taking care not to deflate the air whipped into the whites, to maintain the bread’s fluffy texture.
- Shape Dough: Spoon dollops of the mixture onto the prepared baking sheet, spacing them about 2 inches apart and shaping each into a circle approximately 2 inches wide.
- Bake: Bake in the preheated oven for about 30 minutes or until the cloud breads are golden brown on top and set in the center.
- Cool and Serve: Once baked, remove from the oven and let cool slightly before serving warm to enjoy the best texture and flavor.
Notes
- You can substitute cream cheese for cottage cheese for a richer flavor and creamier texture.
- Be careful when folding to keep the egg whites fluffy; over-mixing will deflate the air bubbles.
- Cloud bread is best eaten fresh but can be stored in an airtight container in the refrigerator for up to 3 days.
- For a sweeter version, add vanilla extract along with the sweetener.
- This recipe is naturally low in carbohydrates and suitable for ketogenic diets.
