- Make the Mixture: In a mixing bowl, combine the cottage cheese, flour, one beaten egg, salt, pepper, and optional garlic powder. Stir the ingredients thoroughly until the mixture thickens to a consistency suitable for shaping.
- Shape the Bites: Form the thickened mixture into small balls or nugget shapes. Place these formed bites onto a tray and chill in the refrigerator for 30 minutes to help them firm up and hold their shape.
- Prepare Coating: Beat the second egg in a small bowl. Dip each chilled bite first into the beaten egg, then roll them in cornmeal to ensure an even coating that will crisp up when fried.
- Fry: Heat a sufficient amount of oil in a skillet over medium heat. Once hot, fry each cornmeal-coated bite for 2–3 minutes on each side, or until they turn golden brown and crispy.
