For the Creamy Garlic Sauce
- ½ cup plain Greek yogurt
- 2 tablespoons mayonnaise
- 1 tablespoon lemon juice
- 2 garlic cloves, finely minced or grated
- ¼ teaspoon salt
- 2–3 tablespoons water to thin
Instructions
- Prepare the Chicken: In a medium bowl, toss the chicken pieces with olive oil, paprika, garlic powder, onion powder, oregano, salt, and black pepper until evenly coated.
- Cook the Chicken: Heat a large skillet over medium-high heat and cook the chicken for 6–8 minutes, stirring occasionally, until browned and cooked through.
- Make the Creamy Garlic Sauce: While the chicken cooks, whisk together the Greek yogurt, mayonnaise, lemon juice, minced garlic, and salt in a small bowl. Add water, one tablespoon at a time, to thin the sauce to your desired consistency.
- Assemble the Bowls: Divide the cooked jasmine rice evenly among serving bowls. Top each with the cooked chicken, diced cucumber, cherry tomatoes, avocado slices, and chopped parsley or cilantro.
