This flavorful Chicken & Rice Bowl combines tender, spiced chicken thighs with fresh vegetables and a creamy garlic sauce to create a wholesome Mediterranean-inspired meal. Perfect for a quick weeknight dinner or meal prep, these bowls offer a harmonious balance of protein, grains, and healthy fats with a zesty garlic yogurt drizzle.

Ingredients

Scale

For the Chicken and Rice Bowls

  • 1 ½ pounds boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 cups cooked jasmine rice
  • 1 cup diced cucumber
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • ¼ cup chopped fresh parsley or cilantro
  • Juice of ½ lemon

For the Creamy Garlic Sauce

  • ½ cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 2 garlic cloves, finely minced or grated
  • ¼ teaspoon salt
  • 2–3 tablespoons water to thin

Instructions

  1. Prepare the Chicken: In a medium bowl, toss the chicken pieces with olive oil, paprika, garlic powder, onion powder, oregano, salt, and black pepper until evenly coated.
  2. Cook the Chicken: Heat a large skillet over medium-high heat and cook the chicken for 6–8 minutes, stirring occasionally, until browned and cooked through.
  3. Make the Creamy Garlic Sauce: While the chicken cooks, whisk together the Greek yogurt, mayonnaise, lemon juice, minced garlic, and salt in a small bowl. Add water, one tablespoon at a time, to thin the sauce to your desired consistency.
  4. Assemble the Bowls: Divide the cooked jasmine rice evenly among serving bowls. Top each with the cooked chicken, diced cucumber, cherry tomatoes, avocado slices, and chopped parsley or cilantro.
  5. Finish and Serve: Drizzle the creamy garlic sauce over the bowls and squeeze fresh lemon juice on top. Serve immediately for optimal freshness and flavor.

Notes

  • For extra flavor, marinate the chicken in the spice mix for up to 30 minutes before cooking.
  • You can substitute Greek yogurt with sour cream for a tangier sauce.
  • Add crumbled feta or pickled onions for a Mediterranean twist.
