Ingredients
Scale
Vegetables
- 1 large head of cauliflower, cut into florets (about 5 cups)
Protein
- 2 cups cooked shredded chicken (rotisserie works great)
Dairy
- 4 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
Seasonings & Sauces
- 3/4 cup buffalo wing sauce
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper, to taste
Optional Garnish
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat and Roast Cauliflower: Preheat your oven to 400°F (200°C). Toss the cauliflower florets with olive oil, salt, and pepper. Spread them evenly on a baking sheet and roast for 20-25 minutes until they turn golden and are tender.
- Prepare Buffalo Sauce Mixture: While the cauliflower roasts, soften the cream cheese by melting it in a large bowl using a microwave or stovetop. Stir in the buffalo wing sauce, garlic powder, and onion powder until well combined.
- Combine Chicken and Sauce: Add the cooked shredded chicken to the buffalo cream cheese mixture and mix thoroughly to coat the chicken evenly.
- Mix Roasted Cauliflower with Chicken Mixture: Once the cauliflower has roasted, fold it gently into the buffalo chicken mixture.
- Assemble and Bake: Transfer the entire mixture into a greased 9×13-inch baking dish. Evenly sprinkle the shredded cheddar and mozzarella cheeses on top. Bake at 375°F (190°C) for 20 minutes, until the cheese is bubbly and lightly golden. For a browned cheese topping, you can broil for an additional 2-3 minutes if desired.
- Rest and Garnish: Let the dish rest for a few minutes after baking before garnishing with chopped fresh parsley. Serve warm and enjoy your hearty Buffalo Chicken Cauliflower Bake.
Notes
- Using rotisserie chicken saves time and adds extra flavor.
- Adjust the buffalo sauce amount to suit your preferred spice level.
- Broiling at the end is optional but gives a nice crispy cheese topping.
- For a lower fat version, use reduced-fat cheeses and cream cheese.
- Leftovers can be refrigerated for up to 3 days and reheated in the oven.
