Blackberry Layer

  • 1 ½ cups fresh or frozen blackberries
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon lime juice

Pineapple Layer

  • 1 ½ cups pineapple chunks (fresh or canned, drained)
  • 1 tablespoon honey or maple syrup

Coconut Layer

  • ½ cup coconut milk (full-fat for creaminess)
  • ½ teaspoon vanilla extract


Instructions

  1. Blend Blackberry Mixture: In a blender or food processor, combine the blackberries with 1 tablespoon of honey or maple syrup and lime juice. Blend until smooth. For a smoother texture, strain the mixture through a fine mesh sieve to remove the seeds, then set aside.
  2. Blend Pineapple Mixture: Rinse the blender to remove any blackberry residue. Add the pineapple chunks and the remaining 1 tablespoon of honey or maple syrup. Blend until smooth and set aside.
  3. Prepare Coconut Mixture: In a small bowl, mix the full-fat coconut milk with the vanilla extract until well combined. This will add a creamy layer to the popsicles.
  4. Assemble Popsicles: Layer the blackberry puree, pineapple mixture, and coconut milk alternately into popsicle molds. Use a skewer or toothpick to gently swirl the layers for a pretty marbled effect.
  5. Freeze: Insert popsicle sticks into the molds and freeze for at least 6 hours, or until completely solid.
  6. Unmold and Serve: To easily remove the popsicles from the molds, run the molds under warm water for a few seconds, then gently pull out the pops. Serve immediately and enjoy!
